I changed the lighting and post process of my scene and that allowed the subsurface scattering to come through - in addition I added a grass floor to make it grounded, I made this as a decal, originally intending to vertex paint it, but remembered a decal could work.
Overall, the old screenshots I preferred the colour of the scene, but this new updated project is true to lighting and gives the opportunity for effects to come through that may not have been seen before, such as the SSS.
